Here's a basic recipe for making Hafiz kofta, a delicious Middle Eastern
or South Asian dish typically made with ground meat (such as beef,
lamb, or chicken) mixed with herbs and spices, shaped into small balls
or cylinders, and then cooked. You can adjust the spices and herbs
according to your taste preferences.
### Ingredients:
**For the Hafiz Kofta:**
- 500g ground meat (beef, lamb, or chicken)
- 1 small onion, finely grated
- 2 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley or cilantro
- 1-2 tablespoons breadcrumbs (optional, for binding)
**For the Sauce (Optional):**
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (400g) crushed tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Chopped fresh parsley or cilantro for garnish
### Instructions:
1. **Prepare the Hafiz Kofta Mixture:**
- In a large bowl, combine the ground meat, grated onion, minced
garlic, cumin, coriander, paprika, cinnamon, salt, pepper, and chopped
parsley or cilantro. Mix well until all the ingredients are evenly
incorporated.
- If the mixture seems too wet, you can add
breadcrumbs, a tablespoon at a time, until it reaches a consistency that
holds together when shaped into balls or cylinders.
2. **Shape the Hafiz Kofta:**
- Take small portions of the mixture and shape them into small balls or
elongated cylinders. You can wet your hands slightly to prevent
sticking.
3. **Cook the Hafiz Kofta:**
- You can cook the Hafiz kofta in various ways: grill, bake, or pan-fry. Choose your preferred method.
- If grilling, preheat your grill to medium-high heat and cook the
Hafiz kofta for about 10-12 minutes, turning occasionally, until they
are cooked through and have nice grill marks.
- If baking, preheat
your oven to 200°C (400°F) and place the shaped Hafiz kofta on a baking
sheet lined with parchment paper. Bake for 15-20 minutes or until
cooked through.
- If pan-frying, heat some oil in a skillet over
medium heat and cook the Hafiz kofta for about 8-10 minutes, turning
occasionally, until browned and cooked through.
4. **Prepare the Sauce (Optional):**
- If you'd like to serve the Hafiz kofta with a sauce, heat olive oil
in a saucepan over medium heat. Add the chopped onion and garlic and
sauté until softened and fragrant.
- Stir in the crushed tomatoes,
cumin, coriander, paprika, salt, and pepper. Simmer the sauce for about
10 minutes, allowing the flavors to meld together.
5. **Serve:**
- Once the Hafiz kofta are cooked, serve them hot with the sauce (if
using) and garnish with chopped fresh parsley or cilantro. Enjoy with
rice, bread, or salad on the side.
Feel free to adjust the spices and herbs according to your taste preferences. Enjoy your homemade Hafiz kofta!
