Hafiz Bombay Biryani is a popular dish in Indian cuisine, specifically associated with the city of Mumbai (formerly Bombay). It's a flavorful and aromatic rice dish cooked with spices, meat (usually chicken or mutton), and sometimes potatoes.
Here's a basic recipe for Hafiz Bombay Biryani:
Ingredients:
- 2 cups basmati rice
- 500g chicken or mutton, cut into pieces
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 1/2 cup yogurt
- 2 potatoes, peeled and cubed (optional)
- 4 cloves garlic, minced
- 2-inch piece ginger, grated
- 2 green chilies, chopped
- 1/4 cup chopped coriander leaves
- 1/4 cup chopped mint leaves
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon cumin seeds
- 4-5 whole cloves
- 4-5 whole black peppercorns
- 2-3 bay leaves
- Salt to taste
- Cooking oil or ghee
Instructions:
1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
2. In a large pot, heat some oil or ghee. Add the cumin seeds, cloves, black peppercorns, and bay leaves. Fry for a minute until fragrant.
3. Add the sliced onions and sauté until golden brown.
4. Stir in the minced garlic, grated ginger, and chopped green chilies. Sauté for another couple of minutes.
5. Add the chopped tomatoes and cook until they soften.
6. Now, add the chicken or mutton pieces and cook until they are browned on all sides.
7. Mix in the turmeric powder, red chili powder, and salt. Cook for a minute.
8. Add the yogurt and mix well. Cover and cook until the meat is tender.
9. In a separate pot, bring water to a boil. Add the soaked and drained rice along with some salt. Cook the rice until it's about 70% done. Drain and set aside.
10. If using potatoes, fry them until golden brown.
11. In a large heavy-bottomed pot, layer the partially cooked rice over the cooked meat mixture. Sprinkle some garam masala, chopped coriander leaves, and mint leaves over the rice.
12. Arrange the fried potatoes (if using) on top of the rice.
13. Cover the pot tightly with a lid or aluminum foil. Cook on low heat for about 20-25 minutes, allowing the flavors to meld together and the rice to finish cooking.
14. Once done, gently fluff the biryani with a fork. Serve hot with raita (yogurt sauce) and salad.
